There is very interesting explanation of this in ayurveda. It says think of your stomach as "sigadi" as in "kitchen stove". It tries to burn and digest the food for necessary energy for your body. And in this process you need to give your body some time to get food to process. And you should not drink water or cold stuff during the process. This makes your body have more work to process the colder food. In ayurveda they say this affects your body and in turn digestion process as you age. So you should avoid drinking water after dinner.

There is no scientific research to support that drining water during or immediately after taking meals is harmful. People generally tend to believe that drinking water after meal dilutes the gastric juices which is not correct. Drinking water before and during meals help in feeling satiating and thus enabling one to not to take excess meal in one go. Also taking sips of water during meals helps in making the food moistened. Generally it is recommended that water should be drunk after 15 to 30 minutes of taking meals.

There is always some logic behind anything which we are taught to follow.
Many times people know the reason but some times they do not.
It is advised not to have water immediately after food from old times.
During earlier times it was explained as what Mr Mahesh has mentioned.
In scientific world, we say that immediate water intake after food dilute the digestive enzymes and hence slower down their process of digestion. It also cause the fats to seize down in food pipe by cooling the temperature. For this reason only, some people also suggest to have lukewarm water after meal.
The addition of water also changes the pH which again affect the enzyme activity.

In a seminar, Mr. Rajive dixit told that drinking water immediately is effect the digestion. I think these pints are given by harbal doctor Charak.

Drinking water immediately after having food will affect your digestion process. There are both scientific and Ayurvedic reason for the same.
Drinking water after having food dilutes the acids in your stomach. These acids are essential to breakdown the food and converts into essential nutrients. Drinking water dilutes the acids which in turn make digestion a slower one.

Drinking cold water immediately after food is not advisable because of dilution of gastric - juice needed for the digestion for the food stuff. Even the same has been recommended in Ayurveda. The best way would be to consume a glass of water 30 minutes prior to meal. This has the dual advantages for the system - firstly hydrating the system and secondly a glass of water consumed before the meal would cause a low - intake of food because of fullness of belly. During the process of meal, water- intake immediately not required if we include Salads and Fruits. The system will work for the break down of the food - stuff because of inclusion of watery substances. Hence immediate consumption of water is not recommended. You may consume water after an elapse of 45 minutes of time.
