Does all the breads have cancer causing agents?

A recent study mentions that breads have carcinogens like Potassium bromate and Potassium iodate in it. It is very common nowadays to hear news items like there are some cancer causing agents in food items and in cosmetics. It is very difficult to spend our life without bread and we know how difficult it is to make bread at our home. So, we need to buy bread items from outside only. Does all the breads have carcinogens in it? If not, how can we know whether a bread has carcinogens or not?

The regulations require that full details about ingredients should be marked on the food products as we see in the case of medicines and drugs. But even sub-standard medicines and drugs are manufactured and marketed by some unscrupulous elements. Only very reputed companies follow strict quality control norms, but in such cases their products are costlier and cannot be afforded by the masses. Apparently there is no foolproof method to ensure that the food product is not contaminated or adulterated except to go for high quality products. But such products are not available at all places especially in the smaller cities.
As far as the use of the potassium bromate in bread is concerned, it is in the list of permitted additives. Only recently , the point of its being cancerous is raised. In US use of potassium bromate in breads is not banned, instead the companies are expected to voluntarily not to use the same. The companies who use it, mention so on the labels. If used in right quantities and the bread is baked at right temperature, the chemical gets consumed. However, in the small scale sector and in absence of quality control methods and qualified staff, it is used indiscriminately which is like to cause harmful effects.

Potassium Bromate has been in the list of permitted additives used in making the breads. Potassium Bromate and Potassium Iodate have been identified as "possibly" carcinogenic by International Agency for Reaserch on Cancer in 1999. These substances have already been banned in nations like EU, Canada, China, New Zealand and Australia during the '90s.

Incidentally, the substances under question have not been banned in India. It has been observed in the studies conducted that breads manufactured by big business houses like Britannia, Perfect Bread and Harvest Gold have high levels of concentration of these elements. Many of the companies do not indicate them as the ingredients. Britannia for instance has denied using them even when the tests have proved otherwise.

So, in essence it can be assumed that almost all the breads possibly contain the dreaded substance.

The additives like Potassium Iodate and Potassium Bromate in the breads may cause health issues because of these being carcinogenic in nature. Such findings should make the public alert and they should no more use the products for consumption.
In other countries like China, Australia, Canada, New Zealand etc have banned these ingredients while making breads. In fact, rural people in India lacks awareness with respect to their health due to illetracy and hence it should be the foremost task to the Government to highlight this issue through Public Relation Department to make the public aware of the safety of their health and should ensure that no preservative like Potassium Bromate and Potassium Iodate should be used for the manufacture of breads.

Not all breads are equal. Some lack sugar content. Some lack egg and some are not adding the baking soda. So it all depends on the type of bread. Most of the pizza and burger based shops often have agents which is not suitable for the health. That is why last month there was one news on asking such shops to not use those agents for baking such bread.

Recent decisions have forced the baking shops and the food shops to revise their recipes. So things are going to be changed and regularly checked by the food authorities. Many other countries have already following change in contents which are good for the health of people. So things may change eventually towards healthy bread.
