Hi, You can make many dishes with bitter gourd. Its very healthy food for diabetis patients. You want to prepare bitter guard with bitter or without bitter? If you want to decrease the bitterness just apply salt on bitter gourd slices and cover with paper and put aside for 10 minutes. Add some sugar or jaggery to your curry. Then the curry will be in the taste of bitter-sweet. If you want sour taste also add some mangoes. Then it will be bitter-sweet-sour curry. You can check the recipe of bitter gourd in this link. Hi, We can able to cook more using bitter gourd and depends upon our taste we can cook bitter gourd.some likes to eat this vegetable along with onion and tomato and some like to have it with out onion or others.Here I will give you how to cook bitter gourd with tomatoes and without tomatoes. With Tomatoes 1.Take a pan heat oil add mustard and curry leaves, add chopped onion fry this well and add chopped tomatoes, fry and cook this well.Then add chopped bitter gourd to this,add required amount of chilly powder and salt to taste.add little amount of water and cook this well.It is very taste to eat.we can have it for food and also for chappathi. Without tomatoes Take a pan heat oil add mustard and curry leaves and then add chopped bitter gourd and add chilly powder and salt to taste.Fry this well and don't add water if you need, add some oil and fry this well.This is also very taste to eat. Glad to see that you want to cook the bitter guard with the natural bitterness. For this I would like to suggest a very delicious recipe for dry curry of Bitter guard. Ingredients: Peeled and Pieces of Bitter Guard thin Slices, or whatever shape you prefer 1tbsp Fennel Seeds(Saunf) 2tbsp Gram Flour(Besan) 1tbsp Chilly powder 1tbsp Salt 1tbsp Dry Mango Powder (Amchoor) 2tbsp Corainder Powder (Dhaniya) 5tsp Oil
Method: Put oil in Pan on flame, when gets heated, put gram flour and keep mixing, when nice flavor emerge, add bittergaurd pieces and rest of the pieces to it. After a while bittergaurd will be finely mixed with all the spices, let it cook for 4-5 minutes and can add few spoons of water and cover the pan, and get it cooked for another few minutes. Delicious bitter guard with good bitterness is ready.

hi, Cut bitter guard(100 gms) into small pieces and mix it with two teaspoons of Kadalai Mavu, two teaspoons of maida, Red chilli powder(as per taste) and salt. Mix all and keep it aside for 3 minutes. Heat 10 teaspoons of oil in the pan. take two spoons of mixture and put it in the pan. fry for a minute and drain the oil. Similarly fry all the items and serve

Hello Murali! There are many recipes of bitter gourds. I have already posted one in the recipe section. I am giving here the other one.
Cut bitter gourds into thin slices. Take them in a pan and add some salt. Now add just add half a cup of butter milk. Put the stove in sim and cover the pan for sometime until the butter milk gets exhausted.Now in a pan take oil sufficient to deep fry the bitter gourds. Take few boiled pieces and deep fry them and take them into a bowl. Now remove the excess oil and take little oil and add onions and curry leaves and fry them till they are golden brown.Now take them into a bowl. Now prepare red chilli powder. To prepare, take 15-20red chillies,3tsps jeera,5-6cloves of garlic and a little bit of salt and grind this into powder. Now in the pan that u have fried onions take this grounded red chilli powder and let it fry. Now to this fried chilli powder,add the fried onions and fried bitter gourd pieces, let it remain on stove for 5 mins,stir weel and off the stove. Looks like a tedious process, but the curry tastes very good.

Hi,
It is very simple and good for health. This you can serve for 4 members
Ingredients :
Bitter guard small – 2 nos Curry leaves – a few Chilly Powder - 1/2 tsp Turmeric Powder - 1/4 tsp Salt – to taste Sugar - 1/4 tsp [ optional] Oil for seasoning.
Method:
1.Wash and remove the Seeds from the bitter guard. 2.Chop finely. 3.Add little salt and mix well leave for 2 min. 4.Remove the water from the bitter guard. 5.Place the vessel in stove and add 3 tsp of oil and heat. 6.Add Bitter guard and curry leaves fry for 2 min. 7.Add turmeric powder, chilly powder and salt to the Bitter guard. 8.Fry the oil comes out. 9.Add 1/4 tsp sugar and mix well. 10.Leave from the fire and shift to other bowl.
Now Bitter guard fry is ready, children also like it.

Bitter - Gourd is a rich source of iron, which is good for diabetes patients as well as for everyone.With bitter - gourd we can make several such recipes Paaveikka Mezhukuperatti, Paaveikka Achar, Stuffed Bitter - gourd, Paaveikka Theeyel, Paaveikka Kondattum
Paaveikka Mezhukuperatti Ingredients: Bitter - Gourd : 1 Green Chillies : 3 Curry Leaves : a handful Mustard seeds : 1 tsp Oil : 4 tsp Salt : salt to taste
Method: Finely chop the bitter - gourd and chop the green chillies into longtitudinal slits. Heat the 2 tsp oil and put the mustard seeds. When the mustard seeds crackle put the green chillies. Now when the color of the green chillies turn slight pale, add the finely chopped bitter - gourd and the curry leaves.Mix it well and saute it for 2 mins. Now add salt to it and again saute it for 3 mins and then cover a lid and keep it on sim for 5 mins. Now remove the lid mix it and then add the remaining 2 tsp of oil to it and again saute it for another 5 to 10 mins. Remove it from the flame when the color of the bitter - gourd turn slight golden and serve it.

Wash and remove the pith and seeds from the bittergourd. Cut into small thin slices, mix with a little of salt and let it stand for a few minutes. Then squeeze out and drain the water with your hands. This helps to remove some of the bitter taste in the vegetable. Wash the slices again to remove the excess salt. Add spices to the slices, mix well and fry them in oil. Bittergourd fry is a common dish.
If you are health conscious and wish to avoid deep fried foods, you can cook bittergourd as mentioned below. Heat a little oil, add mustard seeds, curry leaves and let it splutter. Add the bittergourd slices, and some grated coconut. Keep it on a low flame and stirr continuously for a few minutes till the bittergourd is cooked properly and becomes tender. If you prefer a apicy taste, you can add garam masala and pepper powder too.
A typical south indian dish made of bitter gourd :
Grate one half of a coconut.
Heat a pan, add a teaspoon of oil and dry roast the grated coconut till brown.Keep the flame low and keep on stirring continuously. Once the coconut scrapes are brown, add a pinch of turmeric powder, about a teaspoon of red chilly powder, three tsp coriander powder, fenugreek seeds and dry roast and keep aside. Once it cools, grind all the fried ingredients with a little water to form a smooth paste.
In a pressure cooker add the bittergourd slices, and few slit green chilles, a little oil and saute them. Add a little water , and cook for about a whislte or two.
Now add the ground paste, water, salt to taste, a little tamarind pulp and bring to boil.
Heat oil in a pan and splutter mustard seeds, dry red chillies and curry leaves. Add the cooked bittergourd curry, and let it simmer for a while till the gravy thickens.
Traditionally this recipe is called pavaykka theeyal, and is served hot with steamed rice.

You can fry/saute the bitter gourd with just a teaspoon of oil. You can also cook/boil them in water and discard the water.
