Spicy Prawn or Shrimp curry with Coconut milk recipe

This article is about how to make spicy prawn or shrimp curry marinated in spices and coconut milk. This recipe is rich and yummy with its unique blend of different spices. This is a two in one recipe.



 

This recipe is one of my original and unique prawn/shrimp recipes which I am sure would be loved by everyone. This curry can be used as a side dish to with any main course such as rice, roti, bread or any other main course. I have made some alterations in my Granny's recipe and found a more delightful and yummy prawn/shrimp recipe.
In most of the prawn recipes the spices impart their flavor into the prawns, this recipe has a different approach where we impart the flavor of prawns into the spices. This feature makes this recipe very special.

Ingredients


  1. Fresh White prawns deveined 300 grams ( it is very important to devein the prawns before marinating)

  2. Garlic 6 pods crushed

  3. Ginger 5-10 grams crushed

  4. Curry leaves 20

  5. Onions 5 finely chopped

  6. Tomatoes 3 finely chopped

  7. Ginger garlic paste 1 tea spoon

  8. Coriander small bunch finely chopped

  9. Chilly powder ½ teaspoon for marinating and ½ teaspoon for gravy

  10. Turmeric powder ¼ teaspoon(two sets)

  11. Salt to taste

  12. Thyme, oregano (optional)

  13. Lime ¼ teaspoon

  14. Oil 6 table spoon(sunflower oil( or) olive and sunflower oil mix)

  15. Coconut Milk 1 cup

How to prepare


First marinate the white prawns with lime, chilly powder, turmeric and salt for 10 minutes
Take a frying pan and add 3 tablespoon oil. After heating the oil add the marinated prawns and fry them. Fry the prawns till they become gold brown and dry. It would take about 5 to 7 minutes. Add half of the curry leaves, crushed garlic and ginger and fry them again for another 5 to 7 minutes so that the curry leaves, ginger and garlic get flavor of the prawns. Keep these prawns aside in a vessel. These dry prawns can also be a side dish.
After preparing prawns we have to prepare the curry. Add the remaining oil to the frying pan. Add curry leaves and onion. Saute onions so that they become golden brown. Add ginger garlic paste. After 3 minutes add tomatoes and fry the mixture. After 8 minutes the oil should seep to the top. Now add 1 cup coconut milk and half cup water and bring it to boil. You can also replace plain milk instead of coconut milk. Add the prepared prawns and salt to taste to the boiling curry. After which allow the mixture to boil only once in high flame and switch off the stove. Allow the curry to cool and keep it aside for 30 minutes to 1 hour, so that the curry juice marinates the cooked prawns and vice versa. Have this yummy curry with any main course you like.

Tip: we can also have the prawn fry prepared in the beginning as side dish. The prawn fry is also a simple and yummy recipe.
