Appam as a dish is very popular in South part of India. Using the below instant recipe for Appam, one can prepare it easily at home. It can be made from raw rice as well. I have tried to list down the recipe for preparing Appam using Rava (Suji) as the basic ingredient.
Ingredients required (Serves 2-3 persons)
1 cup Rava(sooji)
1/2 cup curd
1 tomato, capsicum and onion (finely chopped)
2 green chilles chopped
1tsp ginger paste
1tbsp chopped coriander
1tbsp peanut powder
Salt
Fruit salt
For seasoning:
1tbsp oil
1 tbsp urad dal
1/2 tsp mustard seeds
5 leaves kaddhi patta (curry)
Procedure to prepare Appam
Take rava in a bowl. Add curd and mix it well. If required add water to it. The batter should be thick. Keep it for around 2 hours.
Now add the finely chopped onion, tomato, capsicum and coriander to it. Also add the green chilles, ginger paste and peanut powder to it. Add salt for taste.
In a pan take oil and heat it. Add urad dal. When the colour of urad dal becomes light brown , add mustard seeds and curry leaves to it.
Keep the batter aside.
Now grease the Appam stand with oil.(Appam stand is available in market)
Add the fruit salt to one portion of batter ( don't put fruit salt to whole batter).
Now pour the batter (the one with fruit salt added) to the greased stand and keep it on gas on low flame for 10- 15 minutes.
Cover it with lid. The sides will become brown in colour and very crisp.
Turn around with wooden spatula on the other side.
Repeat for the remaining batter.
Appam is ready. Serve hot with green chutney, tomato ketchup or enjoy them over with a cup of Masala tea.
Useful Tips related to Appam
One can have Appam during breakfast with coffee or during evening snacks with tea.
It can also be served as started during lunch or dinner.
Generally, Appam is made using raw rice as the basic ingredient, but, it may be a good idea to prepare Appam using rava (as explained in my recipe above), if rice forms major portion of your lunch or dinner. The reasoning behind this is to avoid over consumption of rice in any form.
If you are willing to experiment, you can try dahi appam, instead of dahi vada i.e. soak small rounded pieces of appam in curd and serve it.
To make it even more tasty, things like sweet corn, green peas and cashewnuts.
