Ingredients for preparing sanja
1)Flour or whole wheat flour 4-5 cups
3)Fine semolina (rawa) 1 cup
4)Sugar 5-6 tbsp
5)Cardamom powder ¼ tsp
6)Powdered almonds and cashews 2-3 tbsp
7)Clarified butter (ghee) 2-3 tbsp + extra for brushing
8)Milk ½ cup
10)Oil 1-2 tsp
Procedure of making Sanja
1)Knead smooth and soft dough with flour, salt, oil and water. Cover the dough with damp cloth and keep saide
2)Keep 1 cup of water to boil.
3)Heat clarified butter in a pan and add semolina, fry until golden.
4)Now add ½ cup of boiling water to semolina and remove all the lumps.
5)Add milk and mix well, add more water if required; cook the mixture well.
6)Now add sugar, cardamom and powdered almonds and cashews.
7)Cook the mixture for 5 minutes or till excess liquid gets evaporated and forms soft dry ball.
8)Cool down cooked semolina .
9)Divide the dough into 6-8 equal balls and divide cooked semolina in 6-8 parts.
10)Make bowl of dough and fill in the semolina mixture, seal the open ends and roll with the rolling pin.
11)If you are getting the above step difficult, then divide each dough ball into 2, roll then into rotis; place semolina mixture on one roti apply little water on edges and cover with another roti, seal the edges by pressing them.
12)Fry the rolled rotis on pan, apply ghee and serve.
