Recipes preparation

Soup


Ingredients
100 grams horse gram seeds
4-5 curry leaves
1 green chili
½ tablespoon cumin seeds
1 dry red chili
1 table spoon tamarind juice
Mustard seeds and oil.

Preparation
  1. Wash and soak horse gram seeds in clean water for 6 to 7 hours or overnight.

  2. Morning cooks the seeds using pressure cooker until they are completely cooked.

  3. Remove the water and keep the seeds aside for cooling. When they are cool, grind them in mixer to make a smooth paste of seeds.

  4. Now take a pan and heat oil in it. Add red dry chili, mustard seeds, curry leaves and cumin seeds.

  5. Add tamarind water in the pan and fry to mix all ingredients. When it will start boiling, add water and chopped green chili along with salt. Boil the ingredients for 10 to 15 minutes.

  6. Now it is time to add paste of horse gram seeds in the pan. Mix well and again add tamarind juice for tangy taste.

  7. Cook the soup to reach foaming stage and serve hot with hot rice. Daily consume this soup or lunch and dinner for easy weight loss.

Powder Recipe

Ingredients
Horse gram seeds: 1 cup
Red chilies 8 to 10
Black pepper seeds 1 tbsp
Cumin seeds 1 tbsp
Urad dal 4 tbsp
Tur dal 4 tbsp
Salt as per taste

Preparation
  1. First you need to dry roast the horse gram seeds until the raw aroma go off. Keep it aside and now dry roast urad dal and tur dal together until they change their color.

  2. Dry roast the remaining ingredients like black pepper seeds, cumin seeds and red chilies. Allow all the ingredients to cool down and then grind them all together in mixer by adding salt as per requirement.

  3. Avoid making a fine powder, let it be little coarse. Use this powder with hot rice. Regular consumption of this powder with surely helps you to reduce weight.

Curry for Chapati


Ingredients
½ cup horse gram seeds (pre-soaked overnight)
1½ tsp coriander seeds
¼ tsp black pepper
½ tsp cumin seeds
2-3 red chilies
Asafetida a pinch
2 tsp grated coconut
1 small onion – finely chopped.
½ tsp tamarind juice
½ tsp mustard seeds
1 tsp ghee or oil
Curry leaves a bunch
Salt as per taste

Preparation
  1. Dry roast coriander seeds, cumin seeds and black pepper seeds along with red chilies. After cooling, grind to make dry powder by adding asafetida.

  2. Now add grated coconut in the grinder and grind again by adding little amount of water. Make a smooth paste. Cook horse gram seeds in the pressure cooker and add masala paste in it.

  3. Add water if necessary along with tamarind juice. Add salt and your curry is ready. Tamper with mustard seeds and curry leaves. This curry goes well with chapati or dosa and helps the quick weight reduction.

Porridge

Ingredients
Horse gram seeds 1 cup
Moong dal ½ cup
Garlic pods 3 to 4 (coarsely crushed)
Grated coconut 1 tbsp
Salt as per your need

Preparation
  1. Dry roast both horse gram seeds and moong dal separately and make a coarse powder by grinding them together.

  2. Take a pressure cooker and add this powder in it along with water, crushed garlic pods and salt. Cook it for 10 to 12 minutes on pressure.

  3. After opening cooker garnish with grated coconut. You can also add finely chopped onions and green chilies for extra taste.

Dosa Recipe

Ingredients
Horse gram seeds 1 cup
Raw rice 1 ½ cups
Tur dal ¼ cup
Urad dal ½ cup
Salt as per taste

Preparation
  1. Soak horse gram, urad dal, tur dal and rice in water overnight. Morning grind all ingredients together by using little amount of water.

  2. Empty the batter in pot and close the pot tightly. Keep aside for nearly ten to twelve hours. Now add required quantity of salt and water in the batter.

  3. Keep the dosa tawa ready and spread the batter on it using ladle. Sprinkle oil from all the sides as you do it for regular dosa.

  4. Cook from both the sides and your crispy and tasty dosa is ready. Serve with coconut chutney to reduce weight.

Spicy water


Dry roast horse gram seeds and after cooling down add asafetida and salt in it. Grind the ingredients to make dry powder. Store this powder in tight container. Mix this powder in warm glass of water and consume it twice a day on empty stomach to speed up the process of weight loss. You can also add this powder in butter milk.]

Boiled horse gram

Soak horse gram seeds in water for overnight. Morning remove the water and tie the seeds in cloth to get sprouted. Cook sprouted seeds in water by adding pinch of salt and cumin seeds powder. Consume this boiled horse gram seeds along with finely chopped onion for breakfast. This recipe will help to lose weight quickly.

It should be clearly understood that the 'horse gram' is totally different from ordinary 'gram' which is known as 'Chana' in Hindi language. The uses of horse gram are generally more prevalent in the southern Indian states and it is known as 'Kulthi' in Hindi language. Its name in other Indian languages are as follows -
1. Malyalam - Muthira
2. Tamil - Kollu
3. Marathi - Kulith
4. Kannada - Hurali
Its botanical or scientific name is macrotyloma uniflorum.

Please Let us know the quantity that should be consumed each time and for how many days should this be done. Is it before food or after food or should we consume only this for breakfast or dinner?

I did not know that horse-gram helps in weight reduction or weight management. I am a person who,likes horse-gram chutney. Somehow, horse-gram is not so frequently used in our homes. It is occasionally used for making 'Kanji and Muthira puzhukku'(Kanji- rice gruel; puzhukku- mixed vegetables cooked with flavours and served in a semi solid state)

I think nowadays in schools where there is mid-day meals scheme they use horse-gram for nutrition value.

When I was in Mumbai, I used to see that 'Kulith' i.e. horse-gram is used popularly for general and special purposes.

Whenever I ate happily the Muthira (horse-gram) chutney my mother used to say, " Muthira thinnaal Kuthira poley"- 'If you eat horse-gram you will also grow strong like a horse'.

Should horse gram powder be taken before or after meals and how much and how many times in a day?

I don't know whether consuming horse gram with buttermilk is a good idea or not. If what I understand is right, horse gram and buttermilk should not be consumed together. This combination is known as 'virudha aahara', ie food items that should not be combined and consumed.
