Flattened colocasia dry vegetable recipe


Looking for easy to cook arbi recipes? Colocasia (Arbi) is used as a common vegetable in many parts of our country. It can be taken as dry vegetable or as vegetable curry. In this article is an easy recipe in which the detailed method of preparing flattened colocasia dry vegetable is described.

Introduction

Colocasia is commonly known as Arbi in Hindi and is basically a root like a yam or a potato and is popular in many parts of our country. It can be prepared as dry vegetable or vegetable curry. The dry version is more tastier and delicious. In some parts of our country the dry version is even consumed as snacks with afternoon tea. This recipe gives a step by step method to make flattened colocasia dry vegetable which goes nicely along with the main course as one of the dishes.

The preparation time of the recipe is about 30 minutes.

Ingredients


The quantity of ingredients given below will suffice for 5 persons.
  • Colocasia (Arbi) bulbs - 1/2 kg

  • Turmeric powder - 1/2 tsp

  • Coriander powder - 1 tsp

  • Cumins seeds - 1/2 tsp

  • Ajwain (Carom) seeds - 1/4 tsp

  • Asafoetida powder - 1/4 tsp

  • Onion - 2 Nos. One for saute and one for garnishing.

  • Tomato - 1 No. for garnishing.

  • Kasuri Methi - 1/2 tsp

  • Mango powder - 1/2 tsp

  • Refine oil - 2 tbsp

  • Coriander leafs - 1/4 bunch

  • Salt - as per taste

Method

Take colacasia bulbs in a pressure cooker and add 250 ml water (about 1-1/2 to 2 cups) to it. Keep on medium flame and cook till two whistles. It will take about 7-10 minutes. Do not overcook as that will mash up the colocasia bulbs. Keep aside till it cools down. Once cooled, take it in a pan and peel all the colocasia bulbs either with fingers or a soft knife.

Now press these bulbs (generally 1/2 kg colocasia consists of 15-20 small to medium bulbs) one by one with a spatula to flatten them slightly. Do not flatten much as they will start cracking on sides. Keep the flattened colocasia bulbs aside.

Now take one onion and either grate it or chop finely. Cut other onion coarsely in round shape for garnishing the dish later.

Keep a frying pan on medium flame and pour 2 tbsp refine oil. When the oil is heated up add cumin seeds to it. Let cumin seeds crack and then mix ajwain seeds, coriander powder, turmeric powder, asafoetida, some finely chopped coriander leaves and kasuri methi. Saute for a while and mix grated or finely chopped onion to it. Saute for some time till it turns light brown. Now add the flattened colocasia bulbs to it and saute for some time and add salt to it. Now add mango powder also. Sprinkle a little water and just cook on low flame for 5-6 minutes. Stir in between to avoid sticking to the bottom. If sticking takes place, sprinkle a little water. Simmer for a few minutes. The dish is ready now.

Garnishing and Serving

Keep the dish in a flat plate and garnish with onion rings, tomato flat pieces and coriander leaves. Some people garnish this dish with mint leaves also.

Conclusion

The flattened colocasia dry vegetable is ideal for serving during the main course in lunch or dinner along with other dishes and goes well with chapati or bread. Some people relish this dish with chatni or sauce or raita. This dish can be served both as hot or lukewarm.

A good variation of colocasia dry vegetable.

In our native town colocasia (arbi) is a common vegetable and we have many variations of preparing it as dry or curry types. As it is supposed to be heavy for stomach, we also invariably mix a bit of asafoetida powder in its preparations. Colacasia vegetable prepared with curd is also very tasty. Another variation is its curry with onions and tomato which is also very delicious. Potatoes also go well along with colocasia.
