Biryani arrived in Kolkata in 1856 along with Wajid Ali Shah, the tenth and last Nawab of Awadh. When the British rulers captured his kingdom, Nawab was sent to exile in Kolkata. He arrived in the city with thousands of employees, servants, wives and dancers. The Nawab established himself in present Metiaburooj area of Kolkata. But he had limited means compared to his olden days. Then his Bengali cook made an innovation to save the cost of biryani. He started adding potatoes in the biryani. It tasted different, it saved cost and it was exotic because potato was a rare vegetable in those days which was cultivated only at Dehradun. In this way, Kolkata biryani developed in a different manner than the biryani of Lucknow, Hyderabad, Delhi or other places of the country. Kolkata biryani invariably contains potato.

Royal biryani in restaurants

With the passage of time, the royal biryani found its place in the restaurants of Kolkata. Most probably, during the early part of the twentieth century, the people of the city started relishing this heavenly dish in the restaurants. Some of the restaurants of the golden years of Kolkata (then Calcutta) still remain and thanks to these restaurants, the Kolkattans enjoy biryani of royal taste. Now the famous restaurant has opened many branches all over the city, the connoisseurs of food prefer the main outlet at Park Circus. You can get Arsalan Special chicken and mutton biryanis for Rs. 350/-. It may not be that cheap, but believe me, the taste is heavenly.

No, this famous restaurant has no other branch in this city. Every biryani-lover of Kolkata knows about Nizam's biryani. #4: Zeeshan, Park Circus

This restaurant is comparatively younger than its illustrious cousins (Arselan, Aminia and Nizam's), but over the years, its has also curved a niche in the mind of biryani-lovers of Kolkata. The biryani of this restaurant is served with chicken rezala, which some people may find little bit spicier. But the taste is second to none. It has three outlets in the city, but the Park Circus branch is the oldest.

Be prepared to wait for some time after ordering the food. It must be stated clearly that these four restaurants don't serve beef. Further, the people of Kolkata don't believe in the concept of vegetable biryani. So the vegetarian tourists may not find these famous restaurants very interesting.

So whenever the tourists who want to relish good food during Kolkata visit, must visit this biryani restaurants and compare the taste with that of biryani of Lucknow, Hyderabad and Delhi.
