Gujarat is perhaps the only vegetarian state in India for Gujaratis of all castes and creeds are staunch vegetarians. Certain ingredients like curds, buttermilk, coconut, groundnuts, sesame seeds, sugar and lime juice dominate Gujarati Food and the majority of the dishes contain one or more of these ingredients therefore Gujarati cuisine is considered a healthy one because it has so many protein-packed items of food as its base. The Gujaratis are very fond of snacks which in Gujarat are known as "Farshan". These are prepared in many different ways and are really very tasty. The best known Farshan is the Chivda which is made in dozen different ways with varying ingredients, after you have tasted it you will know why it has gained so much popularity in all the states of India. Gujarati's use sugar and lime juice in almost every dish which gives Gujarati food a unique sweet and sour taste which might not appeal to all people, but their Farshan, sweetmeats and specially pickles are unusually good. Gujarati pickles are perhaps the best pickles in India today and like chivda they too are slowly gaining popularity with all sections of people.
