Cruise galley operations - an overview
Cruise galley operations is a career in the high seas on cruise liners and other ships involving the art of cooking. Students who undergo this course can get to work in cruise liners, initially as trainee cooks and with time progressing to the level of executive chef. In this course the students are not only familiarized with the corporate menus that are prepared on the vessels but also get to understand the international food safety standards that are very much essential to work on cruise ships.
Eligibility and course duration
Degree or diploma in hotel management or culinary arts from one of the recognized institutes. Should have minimum one year professional experience in a hotel or restaurant in the food service business. Should be minimum 21 years of age as on the date of the course.
The duration of the course is 4 months.

During the 4 months of the training you are provided with the complete knowledge about galley operations in a cruise ship along with the international standards on food safety. You get training on cruise line operations and its management, culinary art, material management, safety, hygiene and sanitation. The course involves practical classes where the student gets a hands-on training on the various aspects of cruise galley operations. They get the opportunity for training on real ships. Other than skills on cooking, the students also get valuable inputs on aspects like communication skills, ability to work in teams, multi-cultural work atmosphere, leadership qualities and emphasis on skill development.
On completion of the course you are absorbed by the cruise liners as a Trainee Commi-I or Second Cook. With experience and with all round performance you can reach to the level of Executive Chef. The placements after this course are assured and you will easily get employed by one of the cruise companies. A career in this field is very attractive as you get to see the whole world and get to experience the finest dining services and dishing out great culinary delights from round the world.
