Overview
This is a useful certification program that enables you to work in hotels and restaurants as a specialist chef or cook, specializing in Indian, continental and Chinese cuisine. You will get to learn the various preparations that are popular with each one of them. From soups, starters, main course to desserts, you will learn them all. On one hand you will be learning to prepare sambhar, stuffed parathas, biryanis, paneer preparations and on the other you will be learning about preparing Chinese and continental dishes like chili chicken, Hakka noodles, spring rolls, sandwiches, custards, puddings and so on. Most of these courses are of short duration ranging a few months. The courses are available in a number of hotel management and catering institutes spread across the country.
Eligibility and course duration
Class X or high school pass with at least 50% marks in aggregate. Duration ranges from a couple of months to six months.

As is evident from the name of the program, here you will learn preparing a variety of dishes among Indian, Chinese and Continental cuisine. The course has both theory as well as practical content, but focuses mainly on in-house hands-on training directly in the kitchen. You are given lessons on preparations for starters, salads, soups, main course and desserts for each category. There will be lessons on both veg and non-veg preparation. You get to learn the various ingredients and accessories that goes into each food preparation. You learn of the various equipment and utensils that are unique to each cuisine. Along with the cooking techniques, you will get to learn of the various delicacies that are quite popular with most food aficionados. You will get to learn the recipes by heart. Whether it is learning how to come up with a tandoori preparation or a baked food, these courses are very useful in learning the art of cooking very fast.

You can get employed in hotels, restaurants, cafeterias, food outlets, cafes and other related establishments in the hospitality sector. Initially, you will find employment as a chef, cook, head cook or a kitchen supervisor and later on may progress towards roles such as food manager, restaurant manager, executive chef, catering manager and so on. You may also open your own food outlet.
