Once bitten, twice shy is a Proverb which means that if someone has been hurt once, he tends to be extra careful and alert the next time.
The word shy here can be interpreted as being cautious.
It basically means that one bitter experience teaches you to be more careful in future.
A person tries to avoid situations, circumstances and people who have been responsible for his unpleasant experience before.
