This is quite a gourmet recipe, with ingredients not easily available in India. It is an excellent share, worth a try. I have a few questions that I hope to get answers to –
1. How long to cook the snow peas?
2. Should they be done soft or left al dente?
3. Why does the recipe not recommend pouring cold water over the snow peas to stop the cooking process after they’ve been removed from the boiling water? As I understand the cooking continues if veggies are left to retain the heat.
4. What accompaniment do you recommend with this dish?
5. Can pommery mustard be substituted with Dijon mustard or our very own kasundi?
