Great to read the good medicinal benefits of jack-fruit and its seeds which are not only tasty but also good for health. In our house we have the habit of preparing jack fruit seed curry with added coconut powder for the wonderful taste. The children would love the taste and ask for more. We even prepare Jack fruit sambar on the lines of Ladies finger sambar and that would taste well. The sambar ingredients are made at home itself and thus when we prepare the menu the neighbor would definitely peep at our door for that great smell emanating from our kitchen. I like jack fruit sambar and curry too.

This article is very informative. Most of the people do not consider jack fruit as a good food item. They just throw away this fruit or give to cows or elephants. I have seen ripe jack fruits lying spread beneath the trees with flies and ants eating the rotten fruit.
In Kerala people used to take jack fruit as a food item. It is used as a raw material for different curries. Even at the early stage, before the seeds become hard, it is cut into small pieces, after removing the hard and thorny cover, and cooked to prepare a side dish. Like this at every stage this fruit is utilized. Ripe ones are used for preparing a special sweet item to be served after meals. Chips are prepared using the unripe fruit after removing the seeds. Raw fruit cut into long pieces are boiled, some salt added and dried in Sun light. This can be kept for months in tight jars and whenever needed some could be taken and fried. This fry is eaten with meals.

Ripe Jackfruit is sickeningly sweet. You can smell it from a distance. Like every other fruit, the jackfruit is also a powerhouse of nutrients. It is rich in minerals, vitamins, phytonutrients, electrolytes, fat, protein, carbs and fibre. It is a high calorie food.

Jackfruit is eaten as a vegetable in most of North India; while in the Southern States it is also relished as a fruit.

The seeds of the ripe fruit can be roasted over a fire, shelled and eaten. Roasting gives the seeds a nice crunch and a nutty flavour.

A caution here. For those not much used to it, jackfruit nuts(seeds) can cause indigestion and gas problems. So it is suggested to add one or two teaspoonfuls of jeera(cumin)or a little quantity of ginger to such recipe.

While using the seeds one should be very careful to completely remove the glassy cover. Otherwise, that may stick at the throat and cause problems. That can cause serious problems to small children.

Once familiar and experienced one can cook many recipes including sweet 'kheer' with it.

We all consume jackfruit either as raw vegetable or as a ripe fruit and are addicted to its taste and aroma it yields. Most of us throw away their seeds which is a shame. In some parts of the country, especially in southern India, its seeds are also cooked. They are consumed either after roasting them or by preparing their curries. They can be thoroughly washed and sun-dried and can be used in rainy season for preparing a variety of dishes. They are rich sources of protein. They also contain other nutrients like sodium, potassium, phosphorous, iron, vitamin C etc. They are very low in calories. Approximately 100 gm of jackfruit seed can carry 90-95 calories. This is the reason those who are trying to lose weight can incorporate more and more amount of jackfruit seeds in their daily diet plan and prepare recipes like salad, side dishes, curries etc and still lose weight. Jackfruit seeds should not be consumed by those patients who are on immunosuppression therapy.

Jackfruit and pregnancy
It is a myth that is followed by ages that jackfruit should not be consumed during pregnancy. It is believed that it might cause miscarriages. However, there is no scientific evidence behind it. It is okay to eat this fruit even in pregnancy as it has high nutritional value. Since it is a rich source of vitamin A, it can improve eyesight, facilitate cell production properly as well as takes care that development of the fetus is taking place adequately. It also contains vitamin B3 which is essential to regulate female hormones and keep stress producing hormones in regulation. It should be however be consumed in a small amount as it can affect the health of the mother as well as fetus since it has the ability to cause diarrhoea, especially if consumed in a large amount at once.

Thanks to the Members who have gone through the articles and given their valuable opinions which are all relevant to the topic. So far as jackfruit seeds are concerned, these are a very rich source of iron, potassium, other minerals and vitamins. In Bengal and Tripura, jackfruit seeds are taken in fried form as well as in various pulses. So far as the outer layer of jackfruit seeds is concerned, what Mr. Venkiteswaran has said is very true. Generally, the outer layer is removed after boiling the seeds and only then the seeds are given to small children.

It is a pity that consuming jackfruit and its seeds has drastically gone down even in those states where jackfruit is found in abundance.
