Method Clean and wash the mushrooms, drain them and chop in small pieces.
Peel garlic cloves and chop them finely.
Take a flat pan and put it on medium flame and pour the cooking oil into it. When the oil is heated up, add chopped garlic to it and saute for some time taking care that it does not turn brown. Add basil powder, black pepper, chilli flakes and chopped mushrooms and keep the stove flame to low. Add salt to taste. Now cook for 10 - 12 minutes. In between stir it with a flat spoon and see if any bottom sticking is there. If sticking is observed sprinkle little water time to time and stir.
Now add cheese and cook till it melts and mixes well with the mushrooms. Do not overcook as it will make the cheese hard. Now the mushroom spread is ready.
Keep the bread slices in an electric toaster and prepare the toasts. Do not keep for a longer time as the toasts will turn hard and crunchy. If you do not have a toaster then they can be heated on a pan by applying a little butter on both the sides. This way they will be almost like toasts.
Now cut each of the toast in two triangular parts and place the mushroom spread evenly by spreading it evenly. Keep these on a plate and they are ready to be consumed. Out of 8 bread slices, we will have 16 mushroom spread toasts ready.
Serving Serve mushroom spread toast with tomato sauce or pickle or some homemade chutney as per individual taste.
Variations Some people like the tomato flavour in the mushroom spread. They can mix 2 tbsp of tomato puree while cooking the mushrooms.
Those who do not like the basil flavour can replace it with 1/4 tsp of coriander powder and 1/4 tsp of chaat masala.
