Recipe of Grilled Mixed Vegetable.


The grilled mixed vegetable is a delicious dry vegetable to be consumed during main meals along with other items. It comprises of Cauliflower, Carrot, Capsicum, Mushroom, Paneer, Onion and Tomato. It is baked in an oven and the original taste of these vegetables is preserved. This article gives a step by step detailed method of preparing this dish.

Introduction

The grilled mixed vegetable is a low-calorie sumptuous meal item which can be taken during the main meal times along with other items. It is a filling item and contains good fibre and various nutrients. It is a low-calorie preparation and a cup of this mixed vegetable when prepared gives about 40-50 calories only. The preparation time of the recipe is about 45 minutes.

Ingredients

The quantity of different ingredients mentioned below will be sufficient for 4-5 persons while taken with other items during main meals.

  • Tomato - 200 gm
  • Paneer - 100 gm
  • Carrot - 100 gm
  • Cauliflower -100 gm
  • Capsicum - 1 No.
  • Mushroom - 100 gm
  • Onion - 4 Nos. (1 for garnishing)
  • Mango powder - 1 tsp
  • Red Chilli powder - 1 tsp
  • Curd - 3 tbsp (for marinating)
  • Olive oil - 1 tbsp
  • Fresh cream - 1 tbsp
  • Salt - as per taste
  • Kasoori Methi - 2 tsp
  • Coriander leaves - Little for garnishing


Preparation

Wash all the vegetables and mushrooms thoroughly. Peel the onions. Now cut the vegetables and mushroom into medium sized pieces. Cut 3 onions in medium pieces (by cutting about 6 pieces out of each onion). Put aside 1 tomato and 1 onion for garnishing. Keep all the cut vegetables in a flat bowl and then add curd, red chilli, kasoori methi, olive oil and salt to taste and mix well and keep aside. Let it marinate for 15-20 minutes.

Method

Preheat the oven for a minute at 200-degree centigrade temperature. Transfer the contents of the bowl in a cooking container. Cook it for about 15 minutes at 200-degree centigrade. Some people like the taste for slightly under cooked vegetables while some want it fully cooked. Depending on that, this vegetable should be checked after 8 minutes from the start of cooking and then every 2-3 minutes to stop at the desired cooking consistency.

Once the vegetables are cooked to the desired stage, take out the container from the oven and add mango powder and fresh cream to it. Mix well.

The grilled vegetable dish is now ready.

Garnishing and Serving

Keep the vegetable in a serving bowl and garnish with onion rings, tomato thin & flat cuttings and coriander leaves. This dish can be served both hot as well as at room temperature.

Variations : Generally, children like the Chinese taste in the dishes and for them this can be easily changed to its Chinese version. In that case, mango powder can be skipped and a small pouch of common Chinese noodle masala and 2-3 tsp tomato sauce or soya sauce can be mixed in this vegetable.

This is already a low-calorie recipe but those who are on diet can reduce the calories further by decreasing the quantity of olive oil to half tbsp and skip mixing of fresh cream. In cooking, this is a very common way of reducing the calories in a dish by cutting down the quantities of high-calorie items.

Many people miss the taste of potato in a vegetable. They can add 1 potato which is peeled and cut in medium pieces to the vegetables before marinating. Some people prefer unripe banana in place of potato.
