Green Chillies give a unique flavour to the dishes in which it is used and people having their taste buds developed to relish green chillies enjoy these dishes.
The vegetables used in preparing this dish are all very fibrous and nutritive and have low calorific values. In addition they contain various types of minerals and antioxidants which are beneficial in one way or other for our health and body.
IngredientsThe quantity of ingredients mentioned below will be sufficient for 5 persons while taken with other items during meals.
PreparationWash the vegetables thoroughly and drain out the water. Peel the potatoes, onions and garlic cloves and keep aside. Chop onions, garlic, tomatoes and green chillies in small pieces. Now cut cauliflower, carrots, capsicum, French Beans and potatoes also in small pieces preferably less than half an inch.
MethodKeep a pan on stove in medium flame and pour oil in it. Let the oil heat up and then add cumin seeds to it. Once cumin seeds splatter, add chopped onion and garlic to it and saute for a while. Now add turmeric powder, coriander powder, asafoetida powder and saute for a few minutes and then add chopped tomatoes and green chillies. Mix well and then add all the cut vegetables in it.
Sprinkle some water so that it does not stick to bottom of the pan during cooking. Cook for 15 minutes and stir in between to avoid sticking. Now mix cream and mango powder to it. Mix and cook for another 1-2 minutes and the dish is ready.
Garnishing and ServingGarnish it with coarsely cut green coriander leaves, slices of cucumber and onions.

Appears as a tasty vegetable dish but some people may not like it due to the high dose of chillies until unless the chillies are bigger ones which are generally less hotter.
In that case, I will suggest using tomato sauce or ginger garlic sauce in place of chillies to adjust the hotness so the taste will also be preserved and chillies can be avoided.
