Introduction

Egg Besan (Gram Flour) Cheela (Pancake) is a nutritious and tasty dish and generally consumed as a healthy snack during breakfast or tiffin time.

Once prepared, it appears as a Cheela from one side and omelette from another side. Overall it is in a thick chapati or pancake shape.

Its unique taste has made it a popular dish, especially among the children.

Ingredients

The ingredients and their quantity mentioned below will be sufficient for preparing about 3 numbers of medium-sized Cheelas.

The dish takes about 35 minutes time to get prepared.

  • Besan (Gram Flour) - 1 cup.
  • Eggs - 2 Nos.
  • Ginger - 1/4 inch piece.
  • Cooking Soda powder - 1/8 tsp.
  • Green Chillies (preferably medium sized and less hot) - 1 number.
  • Turmeric powder - 1/2 tsp.
  • Coriander powder - 1 tsp.
  • Cumins seeds - 1/4 tsp.
  • Asafoetida powder - 1/4 tsp.
  • Tomato - 1 Nos.
  • Onion - 2 Nos. (1 for Cheela and 1 for omelette).
  • Garam Masala - 1/4 tsp.
  • Garlic - 3 to 4 cloves.
  • Cooking oil - 1 to 2 tbsp.
  • Salt - as per taste.
  • Green Coriander leaves - 1/2 cup.


Preparation

Peel the onions, garlic and ginger and chop them finely. Chop tomato and green coriander leave also.

Take Besan in a bowl and slowly add water and mix well to make a paste. The paste should not be hard and thick as well as not too thin or dilute with water. The reason is we have to spread it evenly in a pan to make a Cheela (Pancake) later.

Add a little salt, garam masala powder, half quantity of the chopped onions, chopped garlic, cooking soda powder, turmeric powder, coriander powder, cumin seeds and asafoetida powder. Now keep this bowl aside.

Take another bowl and break the eggs in it and beat it with a spoon for sometimes so that the yellow part and white part are mixed well. Add the remaining half of the chopped onion, chopped green chillies, chopped tomato, chopped green coriander leaves and a little salt to it and keep this bowl also aside.

Method

Place a non-sticking pan on the stove in medium flame and sprinkle a little cooking oil in it and spread it evenly. Now take about 3-4 tbsp besan paste and pour it in the pan and spread evenly. Wait for 2-3 minutes and with a flat spatula turn it upside down. Keep it for 4-5 minutes in this position and meanwhile, take about one-third batter from the second bowl and pour it on the Besan Cheela and spread it slowly on the top of the Cheela almost covering it fully.

Let it remain like that for a few minutes so that the omelette also gets thickened. Now turn it upside down and cook for some time so that the omelette is also fully cooked.

If you observe that the Cheela is required to be cooked a bit more then turn it upside down one more time and after a few minutes take it out of the pan and keep it on a plate. The delicious Cheela is ready now for consuming.

Serving

Cheela can be served with sauce or chutney or even pickle. Some people like to have it with curd also. Children will even like it by sandwiching it between two slices of bread and eating it with sauce.

Variations

Those who do not like green chillies can remove it from the ingredients. Some people are on dieting so they can only use the egg white for the omelette avoiding the yellow part.
