Recipe of Delicious Mixed Dry Vegetable (Party Style)


Party-style mixed dry vegetable is a tasty dish which can be prepared for small parties in the house or whenever a few guests are expected for lunch or dinner. This article explains the step by step method of preparation of this dish.

Introduction

Delicious dry mixed vegetable (party style) is a very tasty vegetable dish which is slightly different from the one we usually prepare in our households. This dish is especially prepared when there is a small party in the house or some guests are coming for lunch or dinner.

This dish consumes more amount of cooking oil especially used in the frying of some vegetables before final cooking as compared to the cooking of common household vegetable dishes.

The cooking time of this dish is about 40 minutes.

Ingredients

The quantity or numbers shown against the ingredients mentioned below will be sufficient for 4 - 5 persons considering the fact that there will be a few other items as an accompaniment to this vegetable dish during lunch or dinner time.
  • Cauliflower - about 1/4 bulb or 200 gm.

  • Carrots - 1 to 2 Nos. or 150 gm.

  • Capsicum - 2 Nos. or 100 gm.

  • French Beans - 10 to 12 Nos. or 50 gm.

  • Green Peas - 100 gm.

  • Potato - 2 to 3 numbers medium sized.

  • Green Chillies (preferably medium sized and less hot) - 2 Nos.

  • Turmeric powder - 1/2 tsp.

  • Coriander powder - 1 tsp.

  • Cumin seeds - 1/4 tsp.

  • Cloves - 2 - 3 numbers.

  • Asafoetida powder - 1/4 tsp.

  • Black pepper powder - 1/2 tsp.

  • Red chilli powder - 1/4 tsp.

  • Garam Masala - 1/2 tsp.

  • Onion - 3 Nos. (1 for garnishing)

  • Cucumber - 1 No. (for garnishing).

  • Garlic - 7 to 8 cloves.

  • Ginger piece - 1/4"

  • Mango powder - 1/2 tsp.

  • Cooking oil - 4 to 5 tbsp.

  • Salt - as per taste.

  • Tomato - 2 Nos. (1 for garnishing).

  • Coriander leaves - 1/2 cup.

  • Fresh Cream - 2 tbsp.

  • Tomato sauce - 1 tbsp.

Preparation


Wash all the vegetables well and drain out the water. Peel the potatoes and cut cauliflower, carrot, beans, potato and capsicum in small pieces ranging in approximately 1/2" to 1" sizes.

Remove the cover of the green peas, peel the onions and garlic and keep aside.

Chop 2 onions, 1 tomato, ginger piece, coriander leaves and garlic and keep separately.

Method

Keep a pan on the stove in medium flame and pour 3 - 4 tbsp cooking oil in it. Let the oil heat up and then medium fry potato, cauliflower and carrot pieces. Do not deep fry and avoid them becoming brown. Remove the pan from the stove and take out the fried vegetables and keep aside. Sprinkle a very little salt on them.

By this time the oil in the pan will be reduced to around 1 tbsp. If it is less add some oil to it.

Now, again put the pan along with oil in it on the stove on medium heat and once the oil is heated up add cumin seeds to it. After this add chopped onions, ginger and garlic and saute for some time till the onions just start turning a little brown in colour.

Add salt, coriander powder, turmeric powder, asafoetida powder, red chilli powder, black pepper powder, garam masala, cloves, chopped green chillies and half of the chopped green coriander leaves. Saute for some time till spices start giving out their aroma.

Now add chopped tomato to it and mix well. Cook for 3 -4 minutes.

Add all the fried vegetables, green peas, capsicum pieces and french bean pieces to this and mix well. Cook for about 12 minutes. In between, check for any bottom sticking in the pan and if found so, sprinkle a little water and mix it well to avoid sticking.

At this stage, we have to add mango powder and remaining half of the chopped green coriander and continue cooking the dish but in low flame for another 2 minutes.

Remove the pan from the stove and mix fresh cream and tomato sauce to it.

The dish is now ready for consumption.

Garnishing and Serving

Transfer the dish into the serving bowl. Cut cucumber, tomato and onion in thin round slices and garnish the dish with it. Some people put grated dry coconut also on top of it for garnishing.

As it is a dry vegetable, it can be directly served on the eating plate.

Variations

Those who like boiled eggs and paneer can mix them in this vegetable during the 12-minute cooking phase. Two boiled eggs and 100 gm paneer will be sufficient.

Paneer can be mixed just like that or can be fried in the beginning along with cauliflower, carrot and potato.

Conclusion

Fried vegetables have their own unique taste and the foodies will always love to have them. This dish is also one of that which satisfies our taste buds.

For the calorie conscious persons this dish may appear as an indulgence. They may go for the simple cooked version avoiding the frying phase. Further, potato, oil, cream etc can also be added in limited amount rather than sparingly.
