Chicken Carrot Thoran (Kerala Style Recipe)
2 cups chicken boneless shredded
2 tbsps oil
1 tsp mustard
Handful curry leaves
1 cup grated coconut
1/4 tsp saunf
4 garlic flakes
5 green chillies
1/2 tsp turmeric powder
1 cup carrot chopped
1 cup onions chopped
Salt to taste
Heat a fry pan, Add oil, splutter mustard and add curry leaves, Saute till brown.
Add chopped onions, saute till it changes transparent, add chopped carrots and saute again for a minute. Add chicken pieces, salt and turmeric to taste. Crush grated coconut, garlic flakes and green chillies coarsely. Add to the chicken, stir for a minute or two.
Cover and simmer till all the ingredients are cooked and the the dish is dry.
This can be served as a side dish with Rice and Pulaos or even for Rotis.
Make sure you use only lean chicken meat without skin. Cut them or shred them into ver small pieces. Carrots should also be chopped nicely.
This is a healthy and nutritious dish as it has very little oil and the coconut paste is not cooked for a long time.
