We can't isolate a single branch of Engineering as the best in demand, I feel. There are many potential fields in Engineering which can get you highly-paid jobs. It all depends on the individual's interest in the subject and the performance on the job.
In my opinion, One should be thorough with the subject studied. He should understand the basics and should have the ability to apply the basics in the field of work. That will give him/ her a good advantage in climbing up in career.
The following branches of Engineering are in demand these days.
1. Computer Science and Engineering: These days technology is taking the lead and the use of computers and the internet is on top. Many companies are coming into this sector and people with a UG course in Computer Science and Engineering are being hired by them.
2. Mechanical Engineering: This is an ever-green branch of Engineering. Candidates with BE/B Tech in mechanical engineering have a good scope in engineering industries and they even can go to computer and software companies immediately after completing the course. If the individual does not have any problem working in the field, mechanical engineers will have good earning potential.
3. Aerospace or aeronautical Engineering: The candidates with a degree in this subject will have very good opportunities in space research and defence fields.
4. Civil Engineering: This is also a very good branch with a lot of potential for earning money. Real estate and construction activity is there everywhere and there is a good demand for these engineers.

In my perspective If we consider current trends in education, computer engineering and electrical engineering appear to have vast scope both presently and in the future.
In Computer Engineering, which includes AI, cybersecurity, Machine Learning and so on. There are endless possibilities in computer engineering. Today, everything is shifting towards the technology sector. We can not envision life without technology for that reason making this one of the best engineering fields.
Another best engineering field in my view that has significant demand could be Electrical Engineering because without electricity, no technology would function. Thus, the scope in this field remains consistently high and in demand. Everything from the power sector and telecommunications industry to electronic devices falls under this engineering discipline.
As both of these engineering fields are continually evolving and progressing. So they might be excellent choices for career options, and of course both of them offers competitive salary packages also.
